Mifroma specialises in cheese ripening, conditioning and packaging. In a cave carved into the sedimentary rock by the forces of nature over thousands of years, the company matures different varieties of cheese over many months. More than 100,000 wheels of Gruyère AOP cheese are matured simultaneously throughout the year under unchanging climatic conditions. The matured cheese varieties are packaged, labelled and stored. They include Gruyère AOP, Switzerland Swiss, Emmentaler AOP, Appenzeller, fondue, raclette and other specialities.
